Chocolate Raspberry Green Tea Mousse Cake

Layers of chocolate genoise soaked with rum syrup, layered with raspberry coulis, fresh raspberries, matcha mousse, and topped with chocolate truffle ganache and raspberry jelly.

  1. I've made something similar to this, except it was a pistachio sponge imbibed with a kirsch syrup, dark chocolate ganache, raspberries and a chocolate glaze.
